jing jiang pork tenderloin的做法
prep:
1. cut pork
2. smash ginger and scallion
3.
cut pork tenderloin to strips, marinate w/ scallion ginger water (w/ white pepper, shaoxing, and salt), egg white, soy sauce to absorb w/ massage
rub starch on top till absorbed, then seal with oil
saute the pork and set aside
heat some base oil, add 3 tbsp of sugar till it metls, add bean sauce and saute briefly
add a splash of water and hua-diao to dilute the sauce a bit
saute till the sauce bubbles, then add pork strips on high heat
top with a small splash of sesame oil
serve on top of tofu strips
