香肠土豆泥佐自制洋葱肉汁sausages&mashed potatoes with onion gravy的做法步骤图

用料  

土豆（高淀粉品种） 1kg（中等大小约5个）
洋葱 2个
香肠 8根
牛肉汤 500ml
牛奶 120ml
橄榄油 1勺
黄油 25克
百里香 1枝
片状海盐 1勺
面粉 1勺
香醋（可不用） 2勺
胡椒 适量
糖 半勺

  1. 土豆 洋葱 黄油

  2. 香肠 牛肉汤 橄榄油 百里香 牛奶 盐

  3. 香醋 面粉 糖

  4. 烤箱预热。
    煎锅入油煎5min变棕黄色后入烤箱烤25min。

  5. 烤香肠时制作肉汁和土豆泥。
    洋葱对半切开，再切薄片。
    煎锅入黄油（有香肠汁更好），冒泡后加入洋葱和百里香。
    炒15min不断翻动，至洋葱变软变黄。

  6. 炒洋葱同时煮土豆。
    去皮切四瓣冷水没过，加盐煮开，沸腾后转小火煮15min至变软。（一定要冷水入锅）

  7. 洋葱变软后转小火，入糖炒2-3min，至洋葱粘稠变深棕色，闻起来甜丝丝。

  8. 面粉入锅，充分搅拌至被洋葱吸收。再炒2min至面粉散发焦香，搅动时勺子和平底锅出现沙沙的质感。

  9. 若使用香醋此刻加入并搅匀，加入牛肉汤1/3，一开始可能有结块，持续搅拌至形成光滑粘稠的糊状物。

  10. 逐渐加入剩下的汤，形成清爽滑润的肉汁。沸腾时会变得浓稠，此时离火待用。

  11. 香肠呈深棕色并滋滋响时关烤箱。
    土豆滤干水分待用。
    在干净的煮锅中放入剩下的牛奶和黄油，加热至牛奶沸腾黄油融化，放入土豆关火。

  12. 趁热把土豆泥捣烂（冷却后会发粘）与牛奶黄油混合。

  13. 土豆泥装盘，放入2根香肠，浇洋葱肉汁食用。
